Hello dolls!

Hope everyone’s week is going amazing!

As for me it has started to get crazy busy with events. With that said, my money has been flying like crazy on birthdays, holidays, summer outings, etc. and it just seems events come up more and more each year. I love to be involved in events as much as I can, specially after a long week of work I like to just get out the house for ex; do some retail shopping, Sunday funday with le beau, happy hour with my girls, participate in local activities, but a lot of those things involve some kind of spending. Sometimes I have to pick and choose and keep in mind I have bills to pay, but I also try to see where my unnecessary expenses go towards and try to minimize it so I could use that extra cash on something more important or always have money leftover. It is known that the smallest transactions can add up  and in most cases those purchases are considered a splurge. I don’t  know about you ladies but I hate having to choose between one or the other because I don’t have enough for both, and “balling on a budget is not cute”. Now there is nothing wrong with having a budget on things but there is peace of mind knowing that at the end of the day you are left with money in the bank ! (In other words “balling on a budget” is spending the money you don’t have, by relying on each check you get with no back up money)

So what was my biggest expense?

Like many people I spend most of my time at work so one of my everyday expenses revolves around food. (let me tell you this girl needs her food!!) It’s so easy to just buy food already made and to me it can be an unnecessary expense that can easily be avoided.

How did I fix that?

So I started carrying a tote to work ( which I happily got from AA) just so I can pack just about everything I need, and avoid having to buy anything extra. I make sure I take anything from my breakfast, lunch and at least two healthy snacks. Carrying a tote around has become a life saver! I go grocery shopping and buy anything I want that will last me up two weeks of work, and everything still comes out cheaper than I would had spend from buying food outside. One of the reasons why I prefer taking my own food is because I prefer healthy over junk, my full time lunch than waiting in lines, and my preferences over a limited menu. A girl is trying to stay in shape okay!

I use a tote because I find it to give me a reason to remember to pack my lunch for the next day. In all honestly people find it hard to take food to work because either they say they don’t know how to cook, they don’t have time, or its just out of pure laziness. I myself, am a busy person but it doesn’t take more than 20 mines to prepare your lunch, no more than an hour out of  the week to cook that’s last up to 3 days, and as far as cooking there is many things you can whip up without turning on the stove. It is a habit that many fall into because it makes it easier in their everyday lives when your life is constantly on the go.

P.S Moral of the store is that, try to sit down and see where most of your unnecessary expenses lie and see what you can do to minimize them. I know its not food for everybody but lets not lie how many do fall under this category? Let’s try to help ourselves out a bit !


Anyways… I thought I include some of my favorites(below) 


-banana & green grapes mix
-nutella spread on a gluten free rice cake topped with blueberries/strawberries/bananas
-fig bar/fiber bar
-wheat crackers with humus
-vanilla Greek yogurt w/ a granola gluten free mix. I like to choose vanilla over other yogurt flavors just so I can add anything on top such fruits or different types of oats. 


Garlic chicken & Potatoes(4 Servings):

2 pounds small red-skinned potatoes, quartered
3 tablespoons extra-virgin olive oil
1/2 teaspoon cumin seeds (optional)
Kosher salt and freshly ground pepper
4 cloves garlic, finely chopped
2 tablespoons packed light brown sugar
1 lemon (1/2 juiced, 1/2 cut into wedges)
Pinch of red pepper flakes
4 skinless, boneless chicken breasts (1 1/2 to 1 3/4 pounds)
2 tablespoons chopped fresh cilantro or parsley


Position a rack in the lower third of the oven and preheat to 425 degrees F. Toss the potatoes with 1 tablespoon olive oil, the cumin seeds, 3/4 teaspoon salt, and pepper to taste. Spread in a large baking dish and roast until the potatoes begin to brown, 25 to 30 minutes. 

Meanwhile, heat the remaining 2 tablespoons olive oil in a small skillet over medium heat. Add the garlic and cook, stirring frequently, until lightly golden, about 2 minutes. Remove from the heat and stir in the brown sugar, lemon juice and red pepper flakes. Remove the baking dish from the oven, push the potatoes to the sides and arrange the chicken breasts in the middle. Season the chicken with salt and drizzle with the garlic mixture. Return to the oven and bake until the chicken is cooked through and the potatoes are tender, about 20 minutes. 

Remove from the oven; transfer the chicken to a cutting board and slice. Add the cilantro to the baking dish and toss with the potatoes. Serve the chicken with the potatoes and lemon wedges. Drizzle with the pan juices.

-greens (your choice, I like a spring mix)
-feta cheese
-pinch of cranberries
-dressing (I prefer zesty Italian or cranberry vinaigrette)
-sliced grilled chicken (optional)
